Autumn Squash Salad

A warming salad that is filled with hearty grains, good-for-you vegetables, seeds and fruit.

 

Makes 2 servings

4 handfuls of baby spinach (chopped)
4 stalks of lacinato kale (de-stemmed, washed and cut into ribbons)
1/2 cup farro (quinoa can also be substituted)
Squeeze of 1/2 a lemon, olive oil, salt and pepper
Add ons: roasted squash (delicata, butternut, honeynut), pomegranate seeds, herbed goat cheese, hemp seeds, pumpkin seeds, protein (chicken, salmon or egg)

Mix everything together in a large bowl and serve!
