Oat + Banana Blender Pancakes
These healthy pancakes are absolutely delicious and are dairy-free, gluten-free and have no added sugars (unless you top with maple syrup, which you should!).
Makes 12 pancakes
Ingredients
2 ripe bananas
2 eggs
1/2 cup unsweetened alt milk (oat, almond etc)
1 teaspoon vanilla extract
1 cup old fashioned oats, gluten-free if preferred
1 tablespoon ground flax seed
1 tablespoon chia seeds
2 teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt
Coconut oil or olive oil for cooking
Directions
Add all of your ingredients to the blender and blend on high for 30 seconds. Let batter sit.
Heat up a non-stick pan over medium-high heat.
Grease your pan with olive or coconut oil.
Pour batter (using 1/4 cup measuring cup) onto the pan. Cook for 2-4 mins on each side.
Serve with additional toppings (bananas, nuts, syrup, coconut cream) and enjoy!
